Banana Pudding Supreme, recipe by Jan Dugger
Tonight Sarah and I made Banana Pudding Supreme, a recipe by my principal when I taught for 4 years in a private school. It's rich and tasty, and the only change we made is that we used eight (8) bananas instead of two.
Banana Pudding Supreme
2 bananas
1 box Nilla wafers (do not use generic, trust me)
2 small boxes or 1 large box instant vanilla pudding
Milk as required for pudding
1 (oz.) package cream cheese (you can use low fat)
1 can sweetened condensed milk
1 tps. vanilla extract
1 large carton Cool Whip (or if you are one of those hard core people, make some whipped cream and make it a bit sweet)
In one bowl, blend softened cream cheese and sweetened condensed milk with an electric mixer. In a separate bowl, mix the pudding according to directions. Fold cream cheese mixture into pudding mixture. Add 3/4s of the Cool Whip. In the bottom of a 9x13 pan, arrange a layer of Nilla wafers, followed by a layer of banana slices, then top with the pudding mixture. Repeat, and top with the remaining Cool Whip.
Note: our 9x13 pan was so full we couldn't add the Cool Whip. You could make this in a trifle bowl or other container. If you have self-control, you'll chill it for a while before eating.
We didn't. And it still caused Sarah to say, "Keri, you have opened my eyes to a whole new world."

The reason we made this recipe is because we had SO MANY BANANAS. Why make a healthy smoothie when you can make BPS?
