Days 5 & 6: The Pleasure of Thinking of Others
In my lifetime, not counting the far-too-many times I changed apartments in Florida, I've moved four times. In each place I've made new friends, and one aspect of new friendships that I enjoy is learning what other people like. This weekend when I thought about what to give, I first looked at my opportunities. A dinner party at the home of some friends gave rise to finding a duplicate copy of a small cookbook I had on hand, as the hostess loves new recipes. She seemed delighted with it, which increased my pleasure even more.
I got to have a bonus giving opportunity when half of my lemon cake with lemon curd filling was left. (I served it with fresh whipped cream and blueberries -- yum!) I sent it home with friends who have four children, one of whom loves lemon.
My Day 6 gift was a journal for a fine young man I know, as today he begins a 3-week program at a local university -- his first extended period away from home, with a wide variety of peers from many walks of life. As he's a homeschooler, he'll be bombarded with new experiences, from different personalities to adhering to a stricter schedule. He enjoys writing, is more of an introvert than an extrovert, and I figured he might need a way to process all of his thoughts. When I handed it to him, he said, "Leave it to Mrs. Keri!" I *think* that means he's pleased.
Day 6 brought me a gift -- Andrew offered to fix dessert today, and he made a Bananas Foster-type dish, minus the flames. Served atop blue Bell Homemade Vanilla Ice cream, it was fabulous.

When life gives you lemons, make lemon cake with lemon curd filling.

It was a very "British" tea cake recipe -- sponge with lemon curd filling. If I were there we'd have cake and a cuppa! :0) Do the Welsh have any recipes they're particularly known for? From my ignorant American perspective the Scots have their shortbread (thankfully), the Irish their soda bread, the English their puddings . . . but nothing comes to mind for the Welsh.
