While on vacation, I got treated to this amazing “Summer Pasta Salad.” If you don’t like a bunch of hot food in the summer and you’re tired of the usual fare, I highly recommend trying this. It has a pesto-lime dressing that is made from scratch but worth the time. (Finally, a use for all of my basil!) I can also recommend adding sweet corn and snow peas to the veggies already listed – it gives a tasty, sweet counterpoint to the tangy dressing.
